PC #6 - Chile Colorado Burritos

The key to these yummy burritos is taking 1.5 pounds of cube steak and cooking it in a crock pot with enchilada sauce for 6-8 hours.  This made the meat really tender.  After the steak was cooked, I cooked a small pot of refried beans.  I then took large burrito size tortillas and added some of the steak (I used a slotted spoon to not get all of the sauce in the burritos) and a heaping spoonful of beans.  Once I wrapped up a few burritos, this is what it looked like.  (As you can see one of my tortillas got a hole)

 I then poured the sauce left in the crock pot over the top of the burritos and topped with shredded cheese.  It was broiled for about 5 minutes.  We will do this one again.  It was quite tasty.

PC#5 - Smash Potatoes





These little potatoes were quite yummy and relatively easy.  I just boiled, smashed, seasoned, and baked, and voila!  I seasoned with garlic salt, Tony's, and parsley and basted with olive oil.  The top picture is what they looked like before baking, and one to the side is how they looked after I took them out of the oven.  YUMMO!

PC#4 - Frozen Greek Yogurt Blueberries


This was quite a simple and tasty pin.  I used a toothpick to dip the blueberry into the yogurt.  Then, I placed each blueberry in a cookie pan (a cookie sheet wouldn't fit in my freezer).  I froze them for about a total of 1 hour, then took them out.  I used a spatula to get them off of the pan, and then placed them in a bag for easy eating.  Elie really liked these, so I will be making them again.


Don't leave the bag out of the freezer for more than about 10 minutes or you will end up with traditional liquid yogurt again.

PC#3 - Spinach and Pepperjack Stuffed Chicken

I am not the person who likes to measure, so I absolutely didn't use the exact measurements listed on the recipe.  Also, I added garlic and didn't add any breadcrumbs.  So here's what I did:
I took the boneless, skinless chicken breast and split them in half long ways (I use Tyson chicken, and it is really thick, so I didn't think that it would work rolling up a thick chicken).  Also, I don't tenderize meat, so I wasn't going to flatten it out that way.  I then put a few slices of pepper jack cheese, a spoonful of garlic, and handfuls of spinach in my food processor.  I would pulse it until there was more space in the chopper, then I added more spinach.  I think I added about 5-6 handfuls total of spinach.



Then I added my mixture to my chicken and topped it with Tony's (a cajun seasoning that is a necessity in our kitchen).  Then I stuck a toothpick in them to keep them together.


After baking it in a 350 degree oven for about 35 minutes, our chicken was done.  It wasn't the cleanest meal, but I just spooned the extra mixture from the pan onto the top of the chicken in our plate.


This was definitely a hit!  The only thing I would do differently next time is possibly add on 1 slice of cheese and a tad less garlic.  The mixture seemed too salty, but it really was tasty.

PC #2 - Salsa Chicken


It is hard to say whether I like this recipe or not.  I think I left it in the crock pot for too long so the chicken was mushy.  I will likely make it again - only putting it in the crock pot for 3-3.5 hours (I put it on for 5 hours).  The taste was quite good though. Here's what you need (the original recipe called for cream of chicken soup, but I didn't want to go that route):

  • 3 boneless, skinless chicken breasts
  • 1/2 cup Greek Yogurt (or sour cream)
  • 1/2 jar of salsa
  • 1 packet of taco seasoning
  • tortillas 

Put in the crock pot for a few hours until the chicken is cooked (BEWARE:  Don't go past 4 hours on high!).  Shred the chicken with a fork, put in tortillas and add toppings (more yogurt, cilantro, lettuce, tomato, salsa).

PC #1 - Canvas Fingerpainting

 This was one of the cutest ideas I've come across that I thought Elie would love...and she did!  We scheduled a play date and had a few friends join us in the fun.  First, I taped off her name using masking tape on canvas.  Then I let her paint a single color (I didn't want to end up with a brown canvas after all of the colors mixed together). 
She covered the whole canvas in pink, so then we let it dry.  Next she did green (green and pink are the colors in her room), only I told her to not cover the canvas this time.  I think she did a great job.
We let it sit overnight and then peeled the tape off.

 Now look at this masterpiece.
We absolutely loved this craft.  I would like to try this again on a smaller canvas for labels for different thing such as dress-up area or craft area.

Pinterest Challenge

I absolutely love trying new ideas, and I have gotten a lot of them lately from Pinterest.  So I am starting a Pinterest Challenge in which I will attempt 50 things from Pinterest and post how they turn out.  I hope to have it completed by the end of the summer, but who knows!
