PC #2 - Salsa Chicken


It is hard to say whether I like this recipe or not.  I think I left it in the crock pot for too long so the chicken was mushy.  I will likely make it again - only putting it in the crock pot for 3-3.5 hours (I put it on for 5 hours).  The taste was quite good though. Here's what you need (the original recipe called for cream of chicken soup, but I didn't want to go that route):

  • 3 boneless, skinless chicken breasts
  • 1/2 cup Greek Yogurt (or sour cream)
  • 1/2 jar of salsa
  • 1 packet of taco seasoning
  • tortillas 

Put in the crock pot for a few hours until the chicken is cooked (BEWARE:  Don't go past 4 hours on high!).  Shred the chicken with a fork, put in tortillas and add toppings (more yogurt, cilantro, lettuce, tomato, salsa).

PC #1 - Canvas Fingerpainting

 This was one of the cutest ideas I've come across that I thought Elie would love...and she did!  We scheduled a play date and had a few friends join us in the fun.  First, I taped off her name using masking tape on canvas.  Then I let her paint a single color (I didn't want to end up with a brown canvas after all of the colors mixed together). 
She covered the whole canvas in pink, so then we let it dry.  Next she did green (green and pink are the colors in her room), only I told her to not cover the canvas this time.  I think she did a great job.
We let it sit overnight and then peeled the tape off.

 Now look at this masterpiece.
We absolutely loved this craft.  I would like to try this again on a smaller canvas for labels for different thing such as dress-up area or craft area.

Pinterest Challenge

I absolutely love trying new ideas, and I have gotten a lot of them lately from Pinterest.  So I am starting a Pinterest Challenge in which I will attempt 50 things from Pinterest and post how they turn out.  I hope to have it completed by the end of the summer, but who knows!

Reading the Bible in a Year

Last year I began the journey of reading through the Bible, from Genesis to Revelation.  There are lot of 'methods' for reading through the Bible in a year, but I went on my own pace, reading just what I felt I needed to that day.  Before I often would read where I felt lead to read, but this time I took the time to read all the way through.  I began last spring, and this spring I completed my journey.  There are lot of 'methods' for reading through the Bible in a year, but I went on my own pace, reading just what I felt I needed to that day.  I didn't set out with limitations on when I would complete it, but I did make a promise to God that I would read through it like I promised.  I finished reading the Bible one night, and the very next morning we were offered the military housing we've been waiting 22 months for!  Coincidence...I think not.  I believe that completing my promises to God brings great rewards!

Nepal Trip!!!

I leave this coming Wednesday to work with this great organization in Nepal.  We are going to visit border stations, house churches, and host a conference for believing women.  I am so excited to see what God has in store for our ladies group.  I would ask that you would take the time to watch the video about KINepal and see what an impact this organization is making on the lives of these girls.  Also, please pray for our team of 14 that we would be able to fulfill all what God has planned for us there.

Weekly Schedule

So I started blogging back in January...well if you count 2 posts as started.  I have decided to get back into it.  I have recently developed a schedule/task list of how our week should go.  Today was the first day that I used it, and I love it.  I didn't have much time where I was sitting around.  I felt very accomplished because I got all of the things done on my list....even a few more.  I know that this will not occur every day, but I have a goal.  Hopefully I still like it as much by the end of the week.  For now, I added the to-do list at the bottom for us to write in things, but I may change that.
